In a previous article, we introduced a recipe with shincha ,first flush green tea: rice balls made with tea leaves after brewing.

Now, here’s another delicious way to use green tea leaves. If you have shincha, that's great, but older tea leaves from your cupboard will work just fine.
These cookies have a refreshing green tea aroma. Made with rice flour and almond flour, they have a light, crumbly texture and melt in your mouth. They're gluten-free.
They're easy to make — just put everything in a food processor and blend. You can add the green tea leaves along with the rest of the ingredients — the processor will break them down perfectly.

In this recipe, loose tea leaves are used, but tea from tea bags works just as well. Simply tear open the tea bags and add the contents to the food professor.

Ingredients
- 80g / 2.8oz butter
- 100g / 3.5oz rice flour
- 40g / 1.4oz almond powder
- 8g / 0.3oz green tea leaves
- Pinch of salt
- Granulated sugar (for coating)
Preparation
Cut the butter into 1 cm cubes and keep it in the fridge.
Instructions
- In α processor, mix all the ingredients except the butter until the green tea leaves are finely ground.
- Add the cold butter and process until the dough becomes moist and begins to come together. It doesn't need to form a perfect clump.
- Place a cling film on a board and put the dough on it. Using the film, shape the dough into a smooth log about 3 cm in diameter.
- Freeze the dough log for at least 30 minutes to make it easier to slice.
- Preheat the oven to 170°C (340°F).
- Spread some granulated sugar in a shallow container. Roll the dough log in the sugar to coat the surface.Tip: If the sugar doesn't stick well, roll the dough on a damp cloth before coating with sugar.
- Slice the log into 1cm thick rounds. Place them on a baking tray lined with parchment paper, and bake for about 20 minutes.
- Let the cookies cool on the baking sheet after removing them from the oven.

They pair wonderfully with matcha. Enjoy!!
