雅 Miyabi - Light Steamed (Asamushi Sencha or Asamushicha)
The youngest most tender tea leaves were handpicked and lightly steamed to preserve leaf shape and create a delicate, complex flavor profile. Grown in Fujieda, Shizuoka, by one of the industry's pioneers in organic farming.

和 Nagomi - Medium Steamed (Sencha)
Okumidori single cultivar sencha grown without pesticides by the 4th generation tea Azuma family farm in the beautiful mountains of Wazuka Village, Kyoto. -
縁 Yukari - Deep Steamed (Fukamushi Sencha or Fukamushicha)
This multiple award-winning deep steamed tea from Soo Village ("Soh-oh"), Kagoshima, utilizes leaves grown organically and according to a heritage cultivation method called Chagusaba Agriculture in which straw is grown in fields surrounding the tea field and used to fertilize the field. A combination of shading and deep steaming create a sweet, umami rich, full-bodied experience.

The amounts above are guidelines. Adjust to preference. More leaf or less water creates a more concentrated tea; higher temperature creates a more bitter tea.
