Azuma Tea Garden is a family-operated, fourth generation farm specializing in tencha tea leaf cultivation and processing (see below). This all-purpose matcha is a culinary grade matcha from the beautiful tea fields of Wazuka, Kyoto prefecture. A finely grounded, spring harvested matcha, this matcha can be widely used to make delights such as matcha tiramisu, matcha cookies, and matcha lattes… (We would love to hear other ideas!) And yes, it is all-purpose, you can simply enjoy it straight as a matcha!

Note that culinary matcha has unfortunately received a bad reputation because in the mass market, the term “culinary” is often used to refer to poorly processed matcha. However, that is not the case! Did you know matcha is best when it's freshly ground?

How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.

The finest organic matcha made with leaves grown at an altitude of 300 - 500 meters in the Tenryu mountains, this matcha was ground by stone mill. Osada Tea has carefully grounded this matcha from a cultivar called \"Gokou\". Made without using any pesticides or chemical fertilizers.

\nGokou cultivar: A cultivar that was specifically developed to suit the soil and climate of Kyoto prefecture. Very well-suited for shading, it is often made into gyokuro or matcha. Gokou is quite common to come across in Kyoto Prefecture, characteristic with its' earthy aroma and deep umami. \n
