Unlike regional and national tea competitions held throughout Japan featuring the unrefined tea leaves that come from farmers, the Nihoncha Awards accepts entries from farms, factories and sellers that are commercial products, refined teas meant for drinking by consumers. From 7-time Minister's Award Winning, 15th generation tea farmer Masahiro Okutomi (Okutomi Tea Garden, Sayama, Saitama), a single cultivar sencha green tea that has been withered slightly for a few hours to impart a floral aroma.

This type of tea is known as ichoucha - \"withered tea\" - and the processing technique is borrowed from oolong tea processing. During withering (a few hours between harvest and before steaming), the leaves undergo a very slight amount enzymatic oxidization, the same process used to create oolong and black teas. Doing this adds floral notes to the leaf.

The Yume Wakaba cultivar was registered in 2006, a cross of Yabukita and an unnamed cultivar with the designation Saitama #9. The cultivar is recognized for having a strong floral aroma after withering, and a strong umami flavor making it suitable for gyokuro as well.

Tea garden owner Akika Kunitomo's father operated a landscaping company in Kochi Prefecture and in the 1990s discovered wild tea plants on an isolated mountainside during the course of his work. He began caring for the plants by clearing away the under brush and but allowing the plants to grow naturally as they had been.

Seeking to return to the roots of tea making in the Kochi region, Kunitomo-san built a small processing factory that focuses on pan-firing tea leaves. Akika took over the project when her father passed away, expanding by using seeds from the original wild plants and creating a managed tea field while continuing to adhere to the philosophy of zero use of pesticides and fertilizer.

Tea garden owner Akika Kunitomo's father operated a landscaping company in Kochi Prefecture and in the 1990s discovered wild tea plants on an isolated mountainside during the course of his work. He began caring for the plants by clearing away the under brush and but allowing the plants to grow naturally as they had been.

Seeking to return to the roots of tea making in the Kochi region, Kunitomo-san built a small processing factory that focuses on pan-firing tea leaves. Akika took over the project when her father passed away, expanding by using seeds from the original wild plants and creating a managed tea field while continuing to adhere to the philosophy of zero use of pesticides and fertilizer.

Mitsuranko, The Honey Orchid, is made from a hand-picked micro lot from these wild tea plants at the end of May.
